What is the best email server software for osx? I'm looking for something that's easy to configure.

If it's OSX Workstation, and it's gonna' be a dedicated mail server, might want to look into CommuniGate Pro or Kerio Server. Both can act as MAPI servers to offer Exchange compatability.
